Ingredients:

2 cups heavy cream
1/2 cup whole milk
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 packet (2 1/4 teaspoons) unflavored gelatin
3 tablespoons cold water

Instructions:


In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 10 minutes to bloom.


In a medium saucepan, combine the heavy cream, whole milk, and sugar. Heat over medium-low heat, stirring occasionally, until the sugar has dissolved and the mixture is hot but not boiling.


Remove the saucepan from the heat and stir in the vanilla extract.


Add the bloomed gelatin to the cream mixture and stir until the gelatin is completely dissolved.


Divide the mixture among 6 ramekins or small dessert cups. Cover with plastic wrap and refrigerate for at least 4 hours, or until set.


To serve, run a knife around the edge of each panna cotta and invert onto a plate. Serve with fresh berries or a fruit compote, if desired.
